Our place is located in Cressy, roughly 30 minutes from Wellington and the popular Wellington Farmers Market where Henry Willis sells his wood-fired Humble Bread every Saturday morning (check out his social pages for dates – he is there until the early fall for as long as the market is running). I love this guys's bread so much, I am happy to get up early on a Saturday to make that drive!


When you go, you can almost always count on a line-up at his tent, largely because he is often fully engaged in conversation with the immediate customer at hand. With Henry – there is no rushing to make small talk so he can get onto the next customer in line, which really is part of his charm. People knowingly nod at one and other while patiently waiting their turn because they soon will have his full attention. Last year, Food and Wine magazine did a very nice spread on PEC and featured Henry – you can see that HERE, and the photos were actually shot by local area photographer Johnny CY Lamb! In fact, after that feature ran – he started selling out of his product faster than ever, so I had to start getting up and out SUPER early if I wanted to score some of his sourdough bagels!
